Another heavy book is called Mac OSX UNLEASHEd by
John Ray
William C. Ray

Mac OSX THE COMPLETE REFERENCE

I think it is the best among the three so far. In the programming osx part
it has automating your work with applescript
using the command line
programming Macos
classic
carbon
cocoa
creating a nothing program for cocoa
The previous book has too much info on UNIX. If you are already a unix expert,
you won't like it.
