就是据说纽约附近很多的一种三文鱼做法。
近年来涨价颇多。
听皇后解释过，又查了查。
昨天三文鱼降价，5.99买回来，
轻松腌制一天，
今天就吃到了油滋汪汪，味道清爽的三文鱼。
从此我屌丝也舍得吃自制的nova lax salmon了。
成分
1 (2-磅）带皮三文鱼
1/2 cup kosher salt
3 TBSP 糖
1/4 杯新鲜dill
1/4 杯加了柠檬水的伏特加
2 TBSP 柠檬屑
2TBSP 橘子屑
制作方法
带皮三文鱼，去碎骨，清洗后拍干。皮向下，置于塑料膜上。
小碗中，将上述成分混合均匀。摸在鱼两侧。
保鲜膜包好，上压重物，冰箱放置24-48 小时。
咸度合适后，冲洗晾干。
切薄片。

President Barack Obama devoted only a short portion of his speech to
immigration, one of his top policy priorities in 2013. The reason for his
brevity could be that the politics surrounding the issue are currently more
delicate than ever. House Republicans plan to release priorities for reform
as soon as this week, and it's a bad time to antagonize them. It's viewed as
better, for now, to let the House GOP have its space to work.
Instead, Obama focused on the positive, saying "members of both parties in
the House want to" address immigration reform this year and urging them to
do it. He didn't go into detail about the specific policies -- he's done so
in previous speeches, including last year's State of the Union address --
such as a path to citizenship for undocumented immigrants, border security
and streamlining the legal immigration system.
And although Obama discussed executive actions he will take on other issues,
he didn't announce any plans on immigration, despite activists' pleas for
him to halt the deportations of undocumented immigrants without criminal
records.
His full immigration comments:
Finally, if we are serious about economic growth, it is time to heed the
call of business leaders, labor leaders, faith leaders, and law enforcement
-- and fix our broken immigration system. Republicans and Democrats in the
Senate have acted. I know that members of both parties in the House want to
do the same. Independent economists say immigration reform will grow our
economy and shrink our deficits by almost $1 trillion in the next two
decades And for good reason: when people come here to fulfill their dreams -
- to study, invent, contribute to our culture -- they make our country a
more attractive place for businesses to locate and create jobs for everybody
. So let’s get immigration reform done this year.

似乎没看见写。
其实smoked salmon 也没有熟。
三文鱼是低温（100？）的烟雾上放置，
主要是增加味道的作用
不过这也是为什么我在诸多方法里，选择了这个加酒的办法。
让更多的方法促进蛋白变性。
我觉得和糟醉做法很类似。
而且，那个鱼板的KV不是说，
这些海鱼的寄生虫还是不影响人类的。

看了看网上的文章，似乎没有一个统一的标准。所以感觉还是得在reputation好的商店
买，这样他们觉得顾客生吃没问题也比较可信放心？

我也查了下，
确实是有这个寄生虫的可能性的。
虽然，文章里也提到，
野生的有寄生虫的可能性大，
农场养殖的，只吃饲料的没检查出来过。
我买的该是farm raised atlantic salmon。
哎。

这主要是防止盐糖的过渡腌制，
咸度合适就停下来，

tuna我也不清楚怎么做，最重要没吃过好吃的。
我倒想问问，说三文鱼不能生吃的依据都有哪些，
这样决定下次买不买，作不作。
话说，上次专门去了FDA介绍的文章，
见前面的贴，。
寄生虫在三文鱼里虽然存在，可后果不十分恶劣呀，
如果真的有没杀死的虫卵，幼虫的话，最后也无非是呕吐、腹泻
这基本上是普通的排异反应。

不过通过本楼的讨论，
我还是开始持有观望态度，
包括原来很爱吃的cold smoked salmon。
在仔细读过做法以后，我可以非常确定的说，l
其实市面上卖的cold smoked salmon也是没有熟的。
如果真有危险的话，以后我也不吃了。
