I am planning to visit Canada and my I-485 is still pending. I know the 30
days Automatic Revalidation would allow me to come back without AP or H1
Visa.
My only concern is if it would affect my GC?

you can't go without AP or H1B Visa if you are AOS

Is it an exception in the "30 days Automatic Revalidation" rule? I changed
my status from F1 to H1B and did not have H1B visa stamp. However, I haven't
used either EAD or AP yet. So my status is still H1B, right?
Does this make it a little different? Am I safe in this case?

30 days Automatic Revalidation is for F or J. for H1B, it is hard to say. it
is not hard to get H1b visa from US embassy in Canada when you visit there
if you don't want to use your AP.

I visited Canada twice and came back with a valid H1B status within 30 days.
