My projects look different as well, and I say that it's one technique/area applied in different applications. You can spend some time to figure out what area you want to use to cover them all. This is no big issue. For the job title, you might want to use "research scientist" kind of thing, rather than just "engineer", because EB1B requires research in the work. Also, there should be at least 3 researchers in the company to enable them sponsor an EB1B.

Would you mind telling us a bit about your earlier research here? People can be quite creative sometimes, and we may come up with a reasonable description. I don't know much about this. The job title is mentioned in their sponsor letter. If they agree to help you apply for EB1B, they might be willing to write about the job in certain words. I hope that you can negotiate with them about it. BTW, are there three or more researchers in your company? My company will specify the number of researchers in the letter. 事在人为, Big Bless!
