Web service doesn't only speak one language. SOAP is a key for the communication.

Thanks. My manager asked me to write some web services using EJB. I am going to let those Web Services return JavaBean( which implements Serializable ) to Web Client (Servlet). You can use WSDL to define your data structure. All Web services-aware platforms provide toolkits to generate native data structure from WSDL. I haven't followed Web services for a while, but I do have the impression that you should be able to also use WSDL to directly bind your service to EJB without having an extra SOAP wrapper.
