Yes, I-140 shows immigration intent. However, I heard there were still
possibilities that your AOS to F1 could get approved. It doesn't hurt to try
because you don't have many options at this point if you cannot find
another job right away. The only thing is that you won't be able to go back
to China because when you apply for visa at the US consulate it will get
denied.

No, you don't need to leave the US to change status. But if you visit China,
you will need a new visa to come back. Thx!
