Birch is hardwood, beech is medium-to-hard, pine is soft. For furniture to
last long, hardwood is better, but it costs more in general. But we usually
don't need kids' furniture to last for decades, so just pick up whichever
looks nice to me.

I'm pretty sure everything in Ikea is MDF or particle board. So birch or
beech or whatever is just the color of the finish. Just pick the color you
like. It has nothing to do with the material.
