print your matlab plot as a file. the suffix of printed
file should be '.ps'. save *.ps to *.jpg or other image
formats, then insert the plot image to your word.

Export to a figure, maybe JPG
Then insert to word. Don't copy the image directly.

Print to eps or color-eps file use "print -deps" and "print -depsc", and then
include them in your Word document, you can even specify the output
resolution.
