I use safflower oil and canola oil safflower oil has the least amount of saturated fat out of all the cooking out there, and of it's unsaturated fats, most of it is poly-unsaturated. canola is just behind safflower on the sat-unsat ratio. I saw this from a chart on my college chemistry book. but safflower oil is more expensive. and ironically olive oil has high saturated fats.
