Probably most dishes in Taiwan came from China--some are local dishes but I
cannot think of any from Japan (hard to believe--because there are many
loanwords in Taiwan from Japanese language), though Taiwan was Japan's
colony for half a century.

No, that dish 茄子烧豆腐 is from China. Chinese mainland. But I do not know where in the mainland, because after 1949 there are so many immigrants from various provinces (prior to that it is easy--they were from Fujian or Norther Guangdong (the latter being Hakka 客家[1]).
[1] Ethnic composition of people in Taiwan nowadays: Hoklo (福佬 or 河洛 in
Chinese characters) 70%, Hakka 14%, 外省人 14% and aborigines 2%.
In Japan, there are well known Chinese dishes (in US and Japan, Japanese
food stores carry spice packs to make those dishes in minutes).

(1) The truth is I did not hear of Panda Express until I read this report.

I went to the website of Suehiro (whose URL I supplied yesterday), and
searched the web again and again. But nowhere says where the restaurant Suehiro got its name.
About shabu shabu. Websites both in Japanese and in English say the term "
shabu shabu" is an onomatopoeia for the sound the meat makes as you swish it
through the water (so it could be called “Swish Swish” in English).
