However you use the EAD, you will be in AOS immediately, which invalidates
the H1.

是滴，不过用了AP不一定让H1b失效。

You keep the record in the HR, right? And your W2, etc, shows where you get
paid. When the 485 case is processed, such info can be pulled out for
validating.
Of course, those are all voluntary information. If you try to hide some,
there's just the risk of fraudulence that you need to bear its consequences.
Also, there are so many illegal immigrants in US, and that's no news.
