prep time: 15 minutes
6 oz Mascarpone cheese (about 3/4 cup)
8 tbsp confectioner's sugar (I used the cane sugar, about 4 tbsp)
2 tsp lemon zest
3 tbsp fresh lemon juice (I only had one lemon left, so use that one to get
the juice)
2/3 cup heavy cream
4 cups fresh raspberries (I only got one small package of raspberries, still
works but 4 cups may be better)
4 fresh ripe peaches, cut into 1/2 inch thick slices(I used 2 peaches)
Steps:
1. In a large bowl, use an electronic mixer to beat Mascarpone cheese, 6tbsp
sugar (I used 3 tbsp), lemon zest, and lemon juice until smooth. In another
large bowl, beat heavy cream until soft peaks form. fold the cream into
mascarpone mixture.
2. place 1 cup of the raspberries and the remaining sugar in a food
processor and pulse, 1 to 2 minutes, until mixture is smooth. transfer to a
bowl and fold in remaining raspberries.
3. place half of the peaches in the bottom of 4 dessert bowls. spoon the
mascarpone and cream mixture over each, dividing evenly. top each with the
raspberry mixture. place remaining peach slices on top.
4. chill in refrigerator for 1 hour.
makes for 4 servings.

的话,可能需要按照原方的量来放。
