I don't think that they count as citations, because none of them are publications (journals, proceedings, and book chapters) themselves. However, they can help you to prove your contributions to see how useful your work is, such as in education, for general public's information, and being adopted in commercial medicines. These evidences are perhaps even more helpful than pure citations to support your contribution.
wiki is editable by anyone, so this may not be that convincing, but you could check out its editing history to see whether you can figure out who added your papers, and let that person write you a support letter to say how influential you are, etc. Is your work used in this medicine? Can you find somebody from that medicine company to write you a support letter? Can you find someone in that company to write you a support letter? Can you let this professor write you a support letter?
