my NIW is current, and MY EB1B just approved, so when I apply 485, which I-
140 should I use? or it doesn't matter?
is there any difference to use I-140 from NIW or EB1b?

The EB2 pai qi may return to an earlier date, then your 485 may be put on
hold. You should use EB1, which is always current.

PD for EB2-NIW might retrogress (or might not), so it is better to use EB1B
I-140 approval with 485 application, unless you want to change your job very
soon (or for some people, who are in danger of losing jobs very soon, it is
safer to use NIW)

同楼上，不想换工作就用EB1B，如果有被雷掉滴可能NIW比较保险。

NIW不需雇主支持，被雷只要转到相同领域其他工作，申请一样有效
