Color

Weight

也就wok是薄铁皮的好，如果你用de buyer的carbon steel fry pan
和griswold 的 cast iron skillet相比就不一定了。

wok是非常特殊的锅，因为是大多数时候是high heat，需要底部比边缘
温度高，中式爆炒，薄的好。
普通平底锅西式做菜需要锅底受热均匀，所以薄的锅子会糊锅。俺举的两个
例子都是top of the line的，重量手感是同样大小钢的重，估计铸铁的锅子
柄短也是一因素。
钢的密度比铁重，不过现在的铸铁锅都比较厚，而厚的钢锅比较少除非commercial
quality的，所以铁锅普遍重是事实。

嗯， 主要还是看锅的厚薄。。。西式锅很多内芯都是铝的， 导热快。。
