这周试着学作Applebee里的铁板牛排。
牛排用的strip steak ，加了盐和现粘碎的黑胡椒。
土豆也根据印象，加了蒜和Oregano。
在grill上。
二者味道都还可以
不过都没有Applebee里那种，
刚入口时的焦香感。
请问，有没有人研究过，
铁板/grill 的焦香的口感，是怎么得到的？

A Nexus 4 smartphone has appeared online for pre-order from a UK mobile
retailer, in the latest sign of Google's next handset.
The device comes with the newest version of the Android operating system,
called Jelly Bean (4.2), according to one part of the listing on Carphone
Warehouse's online store, though this is contradicted elsewhere.
The Nexus phone is described as coming with a 4.7-inch (1,280x768 pixel)
touchscreen display, near-field communications (NFC) technology, 2GB RAM and
a 1.5GHz quad-core Qualcomm Snapdragon S4 processor. It is just 9.1mm thick.
On-board storage is limited to 8GB, and there is no microSD expansion slot.
It has a forward-facing camera with an unspecified number of megapixels for
video calling, and there is an 8-megapixel camera on the rear capable of
capturing full HD images or videos.
It is unclear exactly which version of Android it will be using; while
several sections of the listing state the OS as Jelly Bean 4.2, one section
in the technical details gives the OS as Jelly Bean 4.1.2.
Delivery is given as beginning on 30 October, and the smartphone looks to be
available on the O2 and Vodafone networks for free on contracts of ￡31 per
month or more.
The device is rumoured to be officially introduced at a press event in New
York on 29 October, the same day Windows Phone 8 launches.
The 4.2 build of Android looks like it will have the same name, Jelly Bean,
as the 4.1 build, going by the listing. However, whether it will retain the
name after the official introduction of the OS is not known; it is rumoured
to be called Key Lime Pie.
Google had not responded to request for comment on the listing at the time
of writing.

apple bee 和其他便宜连锁店的牛排都不知道经过什么处理....
要用那么多调味料腌、明明是很便宜的部位煎到七分熟都还可以是嫩的，这种牛排吃起
来我都心惊胆跳
不用回家自己揣摩怎么做吧？他们的东西不是工厂做不出来的吧？

你找找或者问问你家周围镇子里面开了很多年的当地的那种牛排店。一般这种不是连锁
还能当地开了很多年的馆子做出来的味道都比较好。
去吃一次然后学着做。
网上的方子，很多人推荐Alton Brown的。

apple bee， friday, chili's这种都相当于包装得好的高档快餐店，口味口感肯定有
很多非natrual的手法，不用琢磨那么多了

试试前些日子的哪个reverse searing？先放低温烤牛排然后把牛排擦干用大火SEAR。
我上上周试了。这种方法有２个好处：一是不用REST 二是表面焦黄但不黑。的确是
不错的做法。

这个美拉德反应说的真有道理。
蛋炒飯也是一種美拉德反应，
蛋液與米飯表面在加熱時產生焦糖化反應，

简单说，大概就是焦糖化，
中间涉及糖和氨基酸形成深色成分复杂的物质。
可是，重要的是，产生了香气和焦脆的口感，
让你吃了还想吃！

其实我还真的去过。
是zillow上推荐的steak house
我们各个点的不同的菜式，
回来后，也试着作了
我们当时就觉得，非常简单的烹饪
，也能作到饭馆里70%左右的水平。
因为我觉得，steak 主要还是看那块肉的好坏。
因为味道也是以肉的原味为主。
