This is not as hard as you might think. Buy a chunk of meat such as a pork shoulder/leg, turkey breast, or beef roast. Then just oven roast it following any recipe. You may not get it perfect in the first a few times. Keep trying. The only difference between this and the commercial sandwich meat is: they tie the meat really nicely so that the shape is not changed too much during roasting, and less water is lost. The other difference is commercial sandwich meat is more marinated and additives were added. Home roasted meat is much more delicious. And you can control the doneness as well as the source of the meat.
