Does anyone know when I should make visa appointment reservation for them
with Beijing USA embassy? Parents are planning to visit in mid March. Is it
still too early?

many days will it be available for pick up from the visa appointment date??

When you call US Embassy for the appointment, can you pick a future date?
Or they will just assign one for you?
