Your problem is not the visa to return USA but the visa for your mother to go
to Europe. How can your mother get Europe visa in USA? Check the Europe
country website, you will find your mother (B2) can't get visa in USA at least
for German.

I kindly think your mother can not go out of USA after her visa is expired (
she got visa in China and this visa is at most 6 months). Once your mother go
out of USA, her extension will expire automatically. This is just my thinking.
Not sure. Just like F1 visa, you can stay USA as long as you are student. But
once you come back to China, you have to apply F1 visa again. Maybe I am
wrong.

I actually called BCIS about this question. Their answer is as long
as my mom's visa is valid, the multiple entry stands. But mom's visa
should be valid, right? Otherwise she cannot stay in the States legally.
