出国这么久,时常会感到孤独,故喜欢到酒吧品味不同的酒。这么多年来,它已成为
了我的老友,一位让我愿意倾诉一切的挚友。
常去的那间酒吧,会有很多年轻的男人。因为孤独,所以时常会暗暗观察他们。可
能是因为年轻吧,总以为酒代表了男人味,不论工作应酬还是生活时势,总想以酒论输
赢。或许在他们心里,输什么也不能输了酒量。有时我会看到他们醉倒,醉倒后的酒风
让人哭笑不得。
在我年轻的时候也时常拼酒,不过大多是为了工作应酬。虽然酒量不差,但也偶尔
比较狡猾,出各种奇招,不肯让自己先醉倒。可是酒后的痛苦,只有自己知道。
那个时候,我们都不知道如何欣赏酒。
时光流逝,一个人独自在外这么多年,我已不再年轻。经历过岁月的磨砺,也曾在
商场上输过,面对时势,慢慢懂得了如何去细细品尝手中的这杯酒。
开始懂得品酒是商场失利,似乎已经不再酗酒了,因为醉酒太难受,何必与自己过不去
呢。那个时候才能品出酒的弥久沉香。
现在,来到国外这么久,心里的孤独只有自己知道。时常与酒为伴,慢慢品出了酒
的芳香,也懂得了如何欣赏酒。喝的刚刚好,而不会醉,感觉遇到了老友,一切都是那
么的刚刚好。

我说说葡萄酒
每种品系的葡萄的口感都是不同的
最劣质的是国内的那种用吃的葡萄做的葡萄酒
一股甜腻味。好酒是没有甜腻味的。每种葡萄
的风味都不同。

Yeah, well,
If you are going to drink alcohol, drink wines;
If you are going to drink wine, drink red wines;
If you are going to drink red wine, drink French red wines.
Now, in the US, the most popular red wine is Merlot, which is usually easy
to drink. Cabernet sauvignon has more acidity to its taste, but some
research says it has higher anti-cancer or other good antioxidant content.
And there was a very good movie about red wines, Sideways (2004), which
specifically talked about Pinot noir. Here is a quote or conversation in the
movie about Pinot noir, very much as in life:
(Maya and Miles are the two protagonists in the movie. Pinot has several
varieties, and Pinot noir is the red grape variety.)
Maya: You know, can I ask you a personal question, Miles?
Miles Raymond: Sure.
Maya: Why are you so in to Pinot?
Miles Raymond: [laughs softly]
Maya: I mean, it's like a thing with you.

Miles Raymond: Uh, I don't know, I don't know. Um, it's a hard grape to grow
, as you know. Right? It's uh, it's thin-skinned, temperamental, ripens
early. It's, you know, it's not a survivor like Cabernet, which can just
grow anywhere and uh, thrive even when it's neglected. No, Pinot needs
constant care and attention. You know? And in fact it can only grow in these
really specific, little, tucked away corners of the world. And, and only
the most patient and nurturing of growers can do it, really. Only somebody
who really takes the time to understand Pinot's potential can then coax it
into its fullest expression. Then, I mean, oh its flavors, they're just the
most haunting and brilliant and thrilling and subtle and ... ancient on the
planet.
And I think, this can also be described for certain type of women. :-)

Red wine is an acquired taste. I tried many but did not like most of them.
Many people can not drink it straight, to say the least. I am a white wine
drinker, especially Gewurtztraminer and Ehrenfelser. Usually, you can not go
too wrong with these two. My favourite red so far is Carmenere from Chile.
I do not hate Rosé either, but it can be a risky choice too. Over all, I
only like wines that are relatively simple and easy to drink. Not a big fan
of sweet wine.

Just go for a tour through wineries. They usually offer free samples or
charge very little for tasting. It is not your fault if you do not like
certain wines. Follow your own taste. Some of them are very easy drink.

Well, actually, drinking wine is an acquired taste, red or white.
One reason to drink red wines is that red wine can be drunk in room
temperature, while white wine usually needs to be drunk in certain cold
temperature, and that certain cold temperature may change or alter the taste
of certain white wines. Sometimes it has to be precise, and sometimes it is
hard to master. Another reason is that, according to many researches, red
wines has more enzymes and antioxidants than white wines (red wine is
fermented with the red grape skins, which makes the red wine its red color,
while white wine is fermented with the grape skins removed. This may
attribute to the difference in the enzymes and antioxidants contents). So
red wines are better than white wines, from the health point of view.
Now, French red wines are even more unique. Years ago, there was even a
research claiming that French red wines are better or have more in health
benefitting enzymes and antioxidants than other European wines, such as
German wines.
Ever heard of a book, French Women Don’t Get Fat? One big reason that
contributes to French women (and men too) not getting fat and having much
less heart attacks is because they drink red wines, French red wines, of
course!

Trust me, drinking white wine is not that complicated. I just chill it in
the fridge, and ice bucket.
For those who are buying wines blindly, try Gewutztraminer and Ehrenfelser
from Okanagan region, and Carmenere from Chile. You can hardly be
disappointed.
It is just like Maotai. Drinkers do not have to read a big essay to like it.

In China, people like something not because they really like it rationally,

Look, I do not care whether you like reds or whites. I am just giving some
recommendations for easy drinking wines.
Same varietal wine can taste differently from one winery to another. I would
like to see you list a few bottles of reds since you are a big fan of them.

Look, I did not say what I like or don’t like. And I’m doing the exact
same thing: to recommend.
The difference is:
Healthy is measurable, but tasty is not.
So, something tasting good to someone doesn’t necessarily mean it tastes
good for others. Something easy drinking to someone doesn’t necessarily
mean easy drinking for others.
Yes, same variety wine can and do taste differently from one winery to
another. Actually, even for the same vineyard / winery, same variety wine
can taste differently from one vintage year to another (and the prices vary
accordingly). I’m not a wine taster or sommelier, so don’t trust me (but
do trust the information). I will not recommend a specific bottle of wine
solely based on my own taste alone.
By the way, I think you meant “liquor” when you said “alcohol” in your
posts, like brandy, whisky, Maotai, which is distilled alcoholic beverage,
and that’s a totally different story, as far as health benefit goes.

That's too harsh.

Yes, everyone's taste is different. That's why I wouldn't recommend anything
only based on my own taste alone.
Again, drinking wine is an acquired (and trained, I may add) taste. You just
have to try and try. 多试试, 慢慢品尝 / 品味.

OK, speaking of eating / drinking healthy foods, healthy nations / peoples
all have something to offer, for example:
We Chinese: green tea (not necessary red tea, since red tea is baked, which
may break or even destroy its enzyme and antioxidant contents); soybean and
its products, like tofu.
Japanese: sushi / seafood / fish. Research shows that eating fish frequently
may help the brain and prevent or slow down Alzheimer’s (in other words,
eating fish makes you smart). And Japanese eats soybean and its products too
, edamame, tofu.
French: red wine.
Italian: tomato and garlic. Red wine too.
Just saw a news recently, eating hot peppers may prolong your life. So, let
’s eat Sichuan dishes!

More about alcoholic beverages / drinks, a simplified and summarized version:
Beer: fermented from grains, such as wheat, corn, or even rice. Alcohol
content: 3% – 10%
Wine: fermented from fruits, such as grape, apple, and etc. Alcohol content:
10% – 20%
The fermentation process is to turn sugar into alcohol. Usually, grain has
less sugar than fruit, that’s one simplified reason why beer has less
alcohol content than wine.
Liquor or spirit: distilled alcohol beverage. Alcohol content: > 20%
The distillation process is to purify and remove some diluting components
like water, for the purpose of increasing its proportion of alcohol content.
The distilled liquor, without aging, is colorless.
Some different liquors:
Whisky: distilled from beer. Whisky made in Kentucky is Bourbon; whiskey
made in Scotland is Scotch; and etc. Aging in oak or charred (fire burned)
oak barrels gives whisky its light to dark amber color (and different tastes
as well). Bourbon uses fresh charred oak barrels / casks once, and those
barrels / casks then are used for other liquors, such as Scotch, Rum.
Brandy: distilled from wine. Brandy made in a specific region of France,
Charente-Maritime, is Cognac. Brandy is also aged in oak barrels.
Vodka: distilled from any starch- or sugar-rich plant matter (after
fermentation), such as grains or potato. Vodka is not aged but filtered
after distillation.
Gin: distilled from grains (after fermentation) and flavored with juniper
berries. Gin is not aged. So, in a sense, Gin is like Whisky but without
aging and with juniper berries flavored.
Rum: distilled from sugarcane (after fermentation). Rum is aged in used
Bourbon casks.

First, when you say healthy is measurable, you mean HEALTH, right?
Second, health is not measurable. You were brain washed by your doctors that
it is measurable due to a set of numbers; but in fact it's just like
taste, high blood pressure is normal to certain amount of people while might
be unhealthy to others
Same as cholesterol and other numbers

Are you sure that you read through and understand what I am talking about?
“Healthy” here means healthy food, as opposed to “tasty” or tasty food.
When many studies and researches show that a food has certain concentration
of antioxidants, for example, hence it has certain health benefits, and it
is a healthy food, that’s measurable. But if I say a food is tasty, so it’
s a good food and everyone should eat it, then that’s not measurable,
because it may not be tasty for others and it may not be good or healthy. “
Measurable” here means “can be assessed and assessed based on facts”, not
