originally discovered by Unilever in the 50′s, however it wasn’t until
this last decade that the process began to be used within modern cuisine.
One method can be used for shaping liquids which have a high calcium content
like milk, while the other is perfect for liquids like fruit juice or puree
, which contain little to no calcium. Although the exact process used by
Dovetailed has not been revealed yet, it can be assumed that they are using
the latter process. In this process, the liquid or puree from the fruit is
mixed with a very small amount of a substance called sodium alginate, then
quickly placed into a bowl of soluble calcium salt. At this point the liquid
or puree forms tiny spheres, almost like caviar, in which a thin skin holds
the shape of the liquid inside.
What the 3D printer does is combine these little spheres of flavor with

榨汁机是好东西啦,夏天了我每天自己打木瓜,香槟芒果。。。不过我用普通榨汁机,
有点难清理是真的

被粉丝批评了,于是放狗做了点调查,出来把掉在地上的脸再捡起来
植物纤维主要有两个作用,一是饱腹感,二是通便。这两个作用都源于一个原理,人类
肠胃无法消化植物纤维,因为盲肠已经退化为摆设了。榨汁机那点强度根本不足以破环
植物纤维到影响这两个功能的程度,打成汁的纤维人仍然没法消化。
要说打成汁的水果和完整的水果在营养学上最大的区别,主要在一些維生素和抗氧化成
分的“丢失”。为什么呢?因为这些东西本来是存在于细胞内的还原性微环境里的,打
碎细胞之后被释放出来,迅速被氧化而“丢失”了。据说,黄瓜打汁以后,维C只剩20%。
但这个所谓的80%的“损失”其实是被严重夸大了。你不打汁,把水果放嘴里嚼,维C一
样被瞬间氧化。你不嚼,直接吞一个苹果下去,到了胃里,细胞一样要被消化,维C一

你要吃鸡蛋,现在打碎了壳吃,跟昨天打碎了壳的鸡蛋今天吃,不一样的。
你那个blender匀浆了以后,氧化的时间长,损失多;在嘴里匀浆以后,氧化时间短,

processed food都不健康。不process不能吃就算了,例如cooking,像是blender这种

真行,我看 consumerism 应该改叫 marketerism.
以前不是流行那个“粒粒橙”吗?现在有什么“真果粒”之类的。

相对于打得稀烂的一团糊,我还是喜欢果子的天然口感。
