高粉- bread flour
低粉- cake flour
两者都可以是wheat flour，区别主要在于gluten含量高低。
Flour vary greatly in both the quantity and quality of the gluten they
contain because different strains of wheat from different regions and
different growing seasons have different gluten profiles.
