According to what I learned here, USCIS may send the GC to you directly
without interviewing you when your visa is available. But if they decide to
interview you before granting you the GC, you may have to prove you have a
job.

Do they need to interview people for EB-category? It seems that FB-category
could be interviewed. Is that right?

I'm not sure. But EB is "employment based" which means that you might need a
job to receive the visa. But USCIS is unpredictable anyway.
