这个我尽量写的详细一点,因为我知道本版ID都智商特别高~情商也特别高~
1)食材,羊肉,其实美国猪肉味道太大,没有国内那种肉香味,倒是一股莫名其妙的
猪大肠味。而且猪肉里相对而言激素含量高。所以不如牛羊肉。其实美国羊肉还是可以
的,虽然没有新西兰澳大利亚羊肉味道好。但是相对而言,其实价格不高,而且味道也
说的过去。
一般LOCAL的超市都有,米国的羊肉有LAMB和VEAL(靠,记错了,这个是小牛肉,我擦
。这些年我以为是羊肉),至今我也不明白这两个啥区别。我就知道LAMB有羊羔的意思
,就姑且当羊羔肉吃吧。
好的羊排还是挺贵的,家主(夫/妇)们也不能见天儿吃这玩意。但是很多地方有一种
半瘦不肥的类似牛肉大块的羊肉。一般定价6.99~7.99,但是经常打折。所以,价格都
在3~4刀/LB浮动。这个羊肉就很好,肉很多,又带一点儿骨头。
但是这个羊肉烧出来油比较大,所以要配一些吃油的辅菜,美国的就用那种ORGANIC的
小胡萝卜。2刀一包,也不算太贵。中国的就用亚洲超市里的东笋头或者冬笋片就可以
了。
2)准备。这个主要是要把羊肉用热水抄一下,米国宰杀牛羊很少放血,而且都是电锯
切割,很多肉末,血末,骨末。可以把羊肉切成大中块,直接放在冷水里煮沸,之后把
各种末滤除,羊肉清洗干净。这样也能多少压制一些膻腥味道。胡萝卜或者冬笋用清水
洗一下待用。
3)制作。锅里放少量油,注意要少量,羊肉其实挺肥的,会出很多油。加葱花爆香,
然后放入羊肉翻炒,羊肉稍熟之后,加八角,花椒,冰糖,桂皮,姜,蒜等等调料(两
湖川陕人士可加干辣椒),继续翻炒一两分钟,加料酒酱油和少量糟卤,老抽上色。继
续翻炒三到五分钟,加水,正好没过羊肉即可。依个人口味加适量盐。(注意,盐不要
加的太早,太早会导致肉吃上去很涩。或者如果酱油足量,可以不加盐)
4)炖烧。待水开之后,倒入胡萝卜或者冬笋。如果家中有高压锅,可以直接倒入高压
中炖煮,高压锅阀门抬起喷气算起,15分钟即可。如果没有高压锅,普通锅小火炖30分
钟,再大火收汁即可。
5)出锅。依个人口味,可适量撒香菜或者葱花。
适合家中有娃且娃在长身体阶段。食材价格应该12刀以内,价格便宜且营养丰富。实为
居家旅行之必备良菜~~~
