2015感恩节晚餐
一年一度的感恩节又欢快地和亲朋好友 一起度过了,非常充实, 非常感恩.
准备感恩节晚餐总是即忙碌又兴奋,
Starters/Appetizers, 饭前小吃:
- Smoked Salmon in phyllo cups, 熏三文鱼小吃,
填入每个小phyllo杯1茶匙的鲜奶油乳酪 (cream cheese) 拌好碎的红葱(shallots)和黑胡椒,放上熏鲑鱼,莳萝(dill).
- Bacon wrapped dates, 烤培根裹棕蜜枣:
棕蜜枣,去核,填入feta cheese, 包裹在半条薄熏肉片里,在400F的烤箱烤15分钟。
- Baked brie cheese wrapped with puff pastry,
用酥皮裹上brie cheese, 蔓越梅酱, 包好,刷上蛋液, 进400F 烤箱, 20分钟, 金黄, 就好. 配了天然酵母发的酸面包吃。
- 扁豆汤,lentil soup,
用黄油炒洋葱, 西芹, 胡罗卜碎,至软,加入孜然粉,黄姜粉,红椒粉,炒香,加入火鸡汤,月桂叶,扁豆,盐,胡椒,盖煮至软。用手提绞浆机打成糊,倒入浓椰奶一罐拌匀,吃时撒上红葱酥,欧芹。
- sour dough bread, 天然酵母酸面包, 我的酸种养了好几年啦。有一阵没管它,近来养养有又很有活力,
- 烤火鸡, Spice brined, herb-roasted turkey
22 LB fresh all nature turkey
Brine solutions: bring to boil the following and cool overnight 1 cup sea salt, 1 cup brown sugar, 2 qt vegetable broth,
Spices: Bay leaves, fennel seeds, cloves, black pepper corn,
1 gallons of cold water.
Brine the turkey for 48 hours,
取出火鸡,里外擦干后, 放烤架上, 敞开, 放冰箱 24小时风干表皮
第二天, 在腹腔里塞了1 apple slices, 1 onion slices (microwave for 5 minutes before stuffing), 迷香迭, 百里香, sage, 用绳子绑好腿, 外面抹上黄油, 从火鸡胸脯用手把皮肉分开, 肉上面也抹上黄油, 烤盆底下还放了洋葱, 大蒜, 迷香迭, 百里香, 芹菜, 胡萝卜, 还有一罐啤酒, 1罐鸡汤在烤盘里, 这些东西烤完后用来做gravy.
放火鸡在烤架上, 先在预热500F烤箱烤30分钟, 烤箱改温到 355F 烤3小时左右, 开了烤箱风扇烤的, 用温度计厚部位有165F就取出, 30分钟后再切块装盘上桌.
配菜, Sides:
- Mashed potatoes, 土豆泥: 土豆削皮, 用点盐,香叶煮熟, 用food mill把它挤成土豆沙, 拌牛奶, 奶油, 盐,胡椒, 装入铸铁锅,再放进一个装热水的盆里开小火保温。
-Sausage stuffing:
bread cubes, soaked with turkey stock, milk, eggs,
用了Italian sweet sausage, onion, celery, crimini mushrooms, dried cranberries, chopped pecan, diced apple
先炒香腊肠, 加onion, celery, mushrooms, salt, pepper, 炒熟, 加sage, thyme, 加cranberry, pecan, apples 拌入面包里, 倒入抹了黄油的烤盘里, 进烤箱350F先盖着烤30分钟, 再开盖烤10分钟.
-Green bean casserole, 儿子说这是火鸡后第二好吃的菜,
n年前,曾经做过一个經典版的 green bean casserole, with canned cream of mushroom, LG就从此把这道感恩节的传统菜打进冷宫了, 一提这道菜, 他就说, 蔬菜简单点好。
这次去Costco 买两次 Brussel sprouts 没买到, 就决定趁机来给这道菜平反。
Saute bacon, Onion, red peper flakes, white mushrooms, French green beans, Mix with Roux: Flour, butter , milk, heavy cream, Top with bread crumb and bake for 30 in in 350F oven, top with more fried onions before serving
- Twice baked yam with brown sugar and butter
地瓜, 红糖,黄油,marshmallows
红薯先用盐水泡洗过, 400F 烤整红薯, 约40分钟, 切开, 放红糖, 黄油, 再烤5分钟烤至金黄, 加上棉花糖烤金黄.
-Gravy: 火鸡酱汁,
Turkey drippings, butter and flour. 烤火鸡盆里留下来的烤过的蔬菜和鸡汤汁, 过沥到一个小汤锅里, 在炉头上加热, 另用一炒锅把黄油和面粉炒香, 慢慢搅拌到汤里.
-Cranberry sauce, 蔓越酱: 1 LB新鲜的蔓越莓,半杯糖,½ 个柠檬汁,半茶匙盐,一起煮透后, 进冰箱冷却.
-甜点Desserts: Cheesecake,
去年也做了, 很喜欢, 今年加了一瓶南瓜膏(pumpkin butter)在上面, 多了一份感恩节的元素。
同事的妈妈的方子, 她说只要她妈做这个甜点, 其他东西就都不用吃了.
很简单的材料和方法,
我把它放这里:
Sam’s Mom’s Cheesecake:
Ingredients: (make sure everything is in room temperature)
12 oz Cream cheese,
2 eggs
¾ cup sugar
2 tsp vanilla
1 sm sour cream (8 oz)
Instructions: Mix until smooth and pour into graham cracker crust (2 cup of graham cracker with 1 stick of melted butter)
Bake 15-20 minutes at 350F. Let cool 5 minutes
Topping: 1 c sour cream 3 ½ tbsp. sugar 1 tsp vanilla Mix thoroughly, spread evenly over cheese cake.
Bake in oven for 10 min at 350F Let it set in refrigerator for 5 hours
-Maple Pecan pie (William-Sonoma’s recipe)
做了两个, 拿去一个给公司去, 同事问我要方子。
Pre bake the pie crust, pour the filling and bake at 350F for 40 min.
Filling:
4 TB melted butter
½ cup of sugar
½ tsp salt
3 eggs
1 cup of pure maple syrup
1 TB vanilla extract
1 ½ cup of pecan
亮点来啦:朋友带的蛋糕!漂亮吧!
