I was asked this question before. Because you don't want good students feel your class is not interesting/challenging or bad students feel too frustrated and quit your class, I gave the search committee three methods that I would try. First, try to pay more attention to the students who might be left behind. Second, try to provide more office hours for students who need more help. Lastly, try to have the first exam/assignment a little bit easier (but not too easy) so the sdudents can feel confident. Then you can slowly increase the difficulty afterward.
