Of course you should mention it. Such letters are much better than the
independent references who only know you show them your CV and after you ask
them to write you a letter.
Be specific about the influence of your work on his/her research. Impact (
citations of your specific work) is much more important than mere exposures
(namely, publications).
You can say what research of yours inspired him/her to do further work, etc.
