中国各地区面食的形态与口味大不相同,仅山西省的面食种类就高达280多种。
山西人对面食的热爱,与当地的自然条件密不可分。这里的地形以山地高原为主,全年降水较少,适宜种植小麦。在漫长的岁月里,山西人不断创造着新方法,用小麦粉制作出各种面食。
Shanxi people’s love for mianshi is closely related to the local natural conditions. The mountain and plateau dominated terrain with relatively dry weather makes it suitable for growing wheat. Therefore, as time passing by, Shanxi people not only developed an appetite for wheaten food (mianshi), but also invented various ways of cooking wheaten food.
