火爆上海滩的熊爪咖啡开新店了,这次是盲人小哥哥来掌舵
联合创始人王湉解释说:“我们收到了许多关心残疾人的组织和社会公益组织等发来的消息,他们都准备来到开业现场,亲自支持盲人咖啡师殷天保和殷天佑。初步统计下来,约有2000人将赶赴开业。”
Even before of the small cafe's opening, word spread online and interest quickly grew.
"We have received many messages from organizations that care for the disabled and social welfare organizations. They will come to the scene to support the blind brothers. About 2,000 people will attend the opening event roughly," Wang said.
初识
一面水泥墙,一只伸出的“熊爪”,一家没有招牌的小店,却意外地让2020年的冬天变得格外温馨,热爱咖啡的客人与聋哑咖啡师偶然邂逅,让大家认识了“熊爪咖啡”。
HINICHIJOU于2020年12月3日开业,仅3天便火遍全网。
The cafe, Hinichijou — a Japanese expression that can be translated as "extraordinary" — which is also known locally as the Bear Paw Cafe, has gone viral among netizens. That's not just because of its quirky features but also because of its goal of providing employment for people with disabilities.

一墙之隔,是为了保护里面多为聋哑人的咖啡师,他们语言交流不方便,害怕与人打交道。
The popular Shanghai cafe Hinichijou, which provides employment for people with disabilities, is expected to open up to 100 stores across the nation, according to the cafe's co-founder, Wang Haiqing.
Also known as the Bear Paw Café, the cafe has gone viral among netizens after the first store was launched on Yongkang Road on Dec 3, which marked the International Day of People with Disabilities.

“很多人以为,我们是想开这家熊爪咖啡店,所以才招聘的聋哑咖啡师。事实上,我们是因为咖啡师们不想和人打交道,最终才想出了‘熊洞’这样的创意。”王湉曾对光明日报的记者说。他表示,初衷就是想开一家咖啡店,解决聋哑人的就业问题。
2021年11月30日,熊爪咖啡做了巨大的蜕变,在南京西路梅陇镇广场B1层开出第一家没有水泥墙的熊爪咖啡。退去的水泥墙已然悄悄钻进了这些聋哑员工内心,成为了他们内心安全感的堡垒。
陈莹莹是熊爪咖啡的1号咖啡师,开业一年后她便晋级为咖啡导师,负责公司的咖啡培训。当初明确表示不想与人打交道的她,也成为了第一个报名走出“熊洞”的咖啡师。
就这样,熊爪咖啡鼓励了一批又一批曾胆怯、抵触、且就业困难的聋哑人士。
谋新
2022年的新一轮疫情让上海的多种业态举步维艰,熊爪咖啡也相继关闭了3家门店。加上孵化的“种子店”,目前上海共有9家门店,雇佣了80%的残疾员工。
王湉说,聋哑人咖啡师们在他们的帮助下,从一开始的较难找工作,到去年底,已经很容易在上海的咖啡店里存活。
“聋哑咖啡师似乎变成了一种时尚,” 王湉笑着说道。
而对聋哑人士的帮扶,并没有让王湉和团队停下脚步,和身边做公益的伙伴们曾一度陷入讨论:聋哑咖啡师之后,下一个弱势群体是谁?我们可以帮助谁?
“于是我做了一些分析,中国的视障人士差不多1000万人左右,可能只有90万人有工作。大部分做的都是推拿、接电话等工作。”
深思后,王湉下定决心,要给盲人和视障人士至少多一种就业的选择,甚至可以帮助他们一起创业。
According to statistics of the China Disabled Persons' Federation, the total number of people with disabilities nationwide has reached 85 million, including 17 million people with visual impairment.
Wang said that despite there being many people with visual impairments wanting to work, there are very few opportunities for them out there apart from work as massage therapists or phone operators.
"Therefore, I wondered if I could help them find a job or start up their own business to give them more options for employment," Wang said. So far, about 80 percent of his employees across nine stores have disabilities.

盲人咖啡师殷天保,是这家种子店的第一位咖啡师,也是该店的店长与合伙人。1999年出生的他,先天性失明,这个世界的底色对他来说是陌生而灰暗的。
Seed Shop, a new branch of Bear Paw in Pudong district's Times Square, is shaped like an acorn and its baristas include blind brothers Yin Tianbao Yin Tianyou.
为了成为一名合格的咖啡师,对天保来说没有任何捷径。
“没有其他办法,只能一遍遍练习。训练肌肉记忆,说起来简单,但是做起来真的很难。每天练习几百杯也是常有的事。”天保回忆道,很多次,他都想放弃算了,但是他的伙伴们鼓励他“没关系,我们再来,只要你不放弃,我们就一直陪着你”。
Yin Tianbao, born blind in his early 20s, is the manager of the cafe. To get himself up to speed for the cafe's opening he practiced making over 100 cups of coffee every day.
"There is no other way but to practice over and over again," Yin Tianbao told China Daily. "Training muscle memory is easier said than done."
在机械训练的2个多月里,这句话支撑着天保直到出师,就连极需技巧的拉花,天保凭借着肌肉记忆也可以有模有样的拉出爱心了。他的双胞胎弟弟天佑以哥哥为榜样,成为了种子店的二号员工。
It paid off, and he can now make a great cup of coffee in two minutes and has even mastered making latte. He inspired his twin brother Yin Tianyou to follow in his footsteps and become a barista too.

对于天保来说,咖啡带给他的,绝不仅仅是一份工作。
“它让我知道了,大胆的设想敢于去尝试,很多的东西都是从尝试的失败过程中去获得的成功。只要这个事成功,我觉得其他的事或许都可以成功。
"Coffee-making has shown me that I need to be bold and be willing to try new things. Success comes from failure. If I can succeed in this, maybe I can succeed in many other things," Yin Tianbao said.
店铺内所有的设计,团队都一一与天保商榷,还应用了一台为他量身定制的咖啡机,配有不同形状的按键以适应不同的操作,这让天保十分感动。
操作台的边缘用木材、不锈钢、橡胶等材质分段包裹——不同材质对应了收银区、清洁区、出杯区等不同的操作空间。天保可以靠触感和记忆分辨出自己所在的方位,完成咖啡制作。
Their coffee-making has been made possible by the donation of a specially customized coffee machine developed for Yin. The machine, made by Italian coffee equipment brand Rhea Vendors, features buttons in different shapes in order to help the blind navigate its operation.
"The customized coffee machine helps me a lot, otherwise, there may be few cups of good coffee," said Yin Tianbao.

对于天保来说,这家未开业就已经爆火的咖啡店可能是人生重要的一步。而对于王湉来说,这也许只是一个开始。
高复制性、低投资成本和短工期即可打造的“橡果”屋,让王湉思考着“种子店”的未来,如何来帮助更多的盲人和视障咖啡师就业。
“这样的咖啡屋是可以在工厂2周之内生产出来的,且投资不高。如果有想要学咖啡的盲人或视障人士可以来到我们“种子店”进行免费培训,培训好后,可以从工厂里生产出一家一模一样的店和设备,运送到中国各地去。咖啡师去到他的新店后,和他在培训的地方一模一样的,”王湉介绍说。
According to Wang, the Seed Store can be used as a template for others and potentially rolled out at other locations across the country.
If there are blind people who want to be baristas, Wang and his team are willing to give free training here in Shanghai and then produce identical stores and transport them to other cities where the blind baristas want to start their business.
“我只希望可以多开一些,来帮助全国、甚至世界各地的盲人小伙伴们,”王湉说。
