lab的一个特别讲究的意大利小哥曾经给我的‘指导’:“
you have to mix 1kg of flour with about 20g of live yeast. You need 650ml of
warm water. Mix half the water with about a table spoon and a half of salt
and half with the yeast. Then mix everything together and work it by hand
until it's completely smooth and soft.
Divide the dough in 4 parts and work them separately, making little balls.
Then have them rest for a few hours (let's say about 6h if you put 20g of
yeast.
Then set the oven at maximum temperature, put a decent amount of flour on an
oven tray and spread one of the balls of dough without working them,
otherwise they'll become rubbery again. Spread the ball from the center with
your fingers first, then pull the dough on the edges until it's large
enough and of even thickness.
Spread some tomato sauce on the pizza, some pieces of mozzarella and
whatever other ingredients you want (olives, anchovies, tuna, artichokes,
prosciutto, any type of cheese, vegetables... whatever you like). Then add a
little bit of olive oil and origano. Cook a little bit any vegetables which
won't cook quickly enough, like zucchini, bell peppers, eggplant etc.
Put the pizza in the oven... it should be done in about 3-8 minutes,
depending on the oven and the thickness of the dough. Usually, I take it out
when the mozzarella starts making bubbles because it's too hot."
